A quick and easy peach crisp baked in a skillet with a nutty brown butter oat topping, perfect for last-minute desserts or cozy gatherings.

Ingredients

Scale
  • 4 cups fresh peaches, peeled and sliced (about 45 medium peaches)
  • 2 tablespoons granulated sugar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch
  • 6 tablespoons unsalted butter, browned
  • 1 cup old-fashioned rolled oats
  • ½ cup all-purpose flour (or almond flour for gluten-free version)
  • ⅓ cup light brown sugar, packed
  • ½ teaspoon ground cinnamon (optional)
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine sliced peaches, granulated sugar, lemon juice, vanilla extract, and cornstarch. Toss gently until peaches are evenly coated.
  3. Transfer the peach mixture to a 10-inch oven-safe skillet and spread evenly.
  4. In a small saucepan over medium heat, melt the butter, swirling constantly until it foams and turns golden brown with a nutty aroma (3-5 minutes). Remove from heat immediately.
  5. In a mixing bowl, combine rolled oats, flour, brown sugar, cinnamon, and salt. Pour the brown butter over the dry ingredients and stir until crumbly and evenly coated.
  6. Sprinkle the oat topping evenly over the peach filling in the skillet without pressing down.
  7. Bake in the preheated oven for 35-40 minutes until the topping is golden brown and crisp and peach juices bubble at the edges.
  8. Remove from oven and let cool for 10 minutes before serving.

Notes

If topping browns too fast, tent loosely with foil halfway through baking. For extra caramelized edges, broil 1-2 minutes at the end, watching closely. Use almond flour and certified gluten-free oats for gluten-free version. Frozen peaches can be used if thawed and drained. For dairy-free, substitute butter with coconut oil but lose brown butter flavor. Let crisp rest 10 minutes after baking to thicken filling for easier serving.
