Cozy Sausage and Kale Tuscan Soup: Easy One-Pot Recipe

A hearty, creamy Tuscan soup made with spicy sausage, tender potatoes, and fresh kale in a velvety broth. This one-pot wonder comes together in about 45 minutes and is perfect for cold nights, busy weeknights, or meal prep.

  • 1 tablespoon olive oil
  • 1 pound mild or spicy Italian sausage, casings removed
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 3 cups water
  • 1 pound Yukon Gold potatoes, diced into ½-inch cubes
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 4 cups fresh kale, stems removed and leaves chopped
  • ½ cup heavy cream or half-and-half (optional)
  • ½ cup freshly grated Parmesan cheese (plus more for serving)

Instructions

  1. Heat the olive oil in a Dutch oven over medium-high heat. Add the sausage, breaking it up with a wooden spoon as it cooks. Let it brown for 5 to 7 minutes, stirring occasionally.
  2. Remove the cooked sausage with a slotted spoon and set aside. Leave about 2 tablespoons of rendered fat in the pot.
  3. Add the diced onion to the pot and cook over medium heat for 4 to 5 minutes, scraping up browned bits from the bottom, until soft and translucent.
  4. Add the minced garlic, dried oregano, and red pepper flakes (if using). Stir constantly for 30 seconds until fragrant.
  5. Pour in the chicken broth and water, scraping the bottom of the pot. Add the diced potatoes and bring to a boil (about 3 to 4 minutes).
  6. Reduce heat to medium-low and let the soup simmer, uncovered, for 12 to 15 minutes until potatoes are fork-tender.
  7. Remove about 1 cup of potatoes from the pot using a slotted spoon. Mash them with a fork or potato masher, then stir back into the soup.
  8. Return the cooked sausage to the pot. Add the chopped kale and stir. Cook for 3 to 4 minutes until wilted.
  9. Stir in the heavy cream (if using) and grated Parmesan. Let simmer for 2 minutes. Taste and adjust salt and pepper.
  10. Remove from heat and let rest for 5 minutes before serving. Ladle into bowls and top with extra Parmesan and black pepper.

Notes

For meal prep, stop after step 8 (before adding cream and Parmesan). Store the base in the fridge, then reheat and finish with cream and cheese when ready to serve. The potato-mashing trick creates a naturally creamy broth without heavy cream. Use low-sodium broth and taste before adding salt, as Parmesan adds saltiness.
