Instructions

  1. Pop the popcorn: Heat the coconut oil in a large pot over medium-high heat. Add 3 popcorn kernels and wait for them to pop. Add the remaining kernels, cover, and shake gently. Once popping slows to about 2 seconds between pops, remove from heat (about 3-4 minutes). Pour into a large bowl and remove any unpopped kernels (about 8 cups of popped popcorn).
  2. Prepare your workspace: Line a baking sheet with parchment paper or a silicone mat.
  3. Melt the white chocolate: Place the white chocolate melting wafers in a microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until completely smooth (about 1½ to 2 minutes total). If it thickens, stir in ½ teaspoon of coconut oil.
  4. Add the spices: Stir the pumpkin pie spice, cinnamon, and salt into the melted white chocolate. Add the vanilla extract and mix until combined.
  5. Coat the popcorn: Pour the spiced white chocolate over the popcorn. Using a rubber spatula, gently fold the popcorn and chocolate together (about 15-20 gentle folds) until every kernel is coated.
  6. Add the mix-ins: Sprinkle in the Halloween sprinkles and candy corn (if using). Fold a few more times to distribute evenly.
  7. Spread and set: Transfer the mixture to the prepared baking sheet and spread in an even layer, breaking up large clumps. Let sit at room temperature for 10-15 minutes, or refrigerate for 5 minutes, until the chocolate is fully set.
  8. Break into pieces: Once set, break the popcorn mix into bite-sized clusters.

Notes
