A lighter, more mindful version of the classic winter drink that delivers rich chocolate and refreshing peppermint without the guilt. Perfect for cozy nights, this quick and easy recipe uses simple ingredients and comes together in about 10 minutes.

  • 1 ½ cups milk of your choice (unsweetened almond milk, oat milk, or whole milk)

  • ½ teaspoon vanilla extract (pure vanilla extract recommended)
  • Pinch of sea salt
  • ¼ teaspoon peppermint extract (start with less and add more to taste)
  • 2 tablespoons crushed peppermint candies or candy canes (for garnish, optional)
  • Optional toppings: light whipped cream, mini marshmallows, dark chocolate shavings, or a sprinkle of cinnamon

Instructions

  1. Make the cocoa paste: In a small bowl, combine 2 tablespoons unsweetened cocoa powder with 2 tablespoons hot water. Whisk until smooth. The paste should be thick and dark; if too thick, add another teaspoon of water.
  2. Heat the milk: Pour 1 ½ cups milk into a small saucepan. Heat over medium-low heat, stirring occasionally, until steaming but not boiling (about 3 to 4 minutes). Bubbles around the edges indicate the right temperature.
  3. Combine paste and milk: Add the cocoa paste to the warm milk. Whisk continuously until fully incorporated and smooth, about 30 seconds.
  4. Add sweetener and flavorings: Stir in 1 to 2 tablespoons maple syrup or honey, ½ teaspoon vanilla extract, and a tiny pinch of sea salt. Whisk to combine. Taste and adjust sweetness or chocolate flavor as desired.
  5. Add peppermint: Remove saucepan from heat. Stir in ¼ teaspoon peppermint extract. Start with less and add more to taste. Whisk gently.
  6. Prepare garnish: Place 2 tablespoons peppermint candies in a ziplock bag. Seal and crush with a rolling pin or heavy pan to a mix of fine dust and small chunks.
  7. Serve immediately: Pour hot cocoa into a mug. Top with whipped cream (if using) and a generous sprinkle of crushed peppermint. Add dark chocolate shavings or a mini candy cane stirrer if desired. Serve warm.

Don’t skip the cocoa paste step—it prevents clumps and ensures a silky texture. Watch the heat to avoid scorching the milk. Taste as you go to adjust sweetness and peppermint intensity. Crush candies just before serving to prevent stickiness. Use room temperature milk for even heating. For a crowd, double or triple the recipe; cocoa paste can be made ahead and stored in the fridge for up to 3 days.
