This incredibly moist and tender banana bread requires no mixer and comes together in one bowl. Made with simple pantry ingredients, it’s the perfect comfort food for cozy evenings.

  • 3 large ripe bananas, mashed (about 1 ½ cups)
  • ⅓ cup unsalted butter, melted (75g)
  • ¾ cup granulated sugar (150g)
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour (190g)
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ cup chopped walnuts or pecans (optional, 60g)
  • ½ cup chocolate chips (optional, 90g)
  • ¼ cup sour cream or Greek yogurt (optional, 60g)

Instructions

  1. Preheat your oven to 350°F (175°C). Place the rack in the center position. Line your loaf pan with parchment paper, leaving some overhang on the long sides. Lightly grease the exposed ends with butter or cooking spray.
  2. Mash the bananas in your mixing bowl using a fork or potato masher. Leave some small chunks for texture if desired.
  3. Add the melted butter to the mashed bananas and stir until combined into a thick, glossy paste.
  4. Stir in the sugar, egg, and vanilla until smooth and well combined.
  5. Sprinkle the flour, baking soda, salt, and cinnamon over the wet mixture. Stir gently with a folding motion until just combined—do not overmix.
  6. Fold in any add-ins (nuts, chocolate chips, or sour cream) if using, with 10-15 strokes.
  7. Pour the batter into the prepared pan and spread evenly. Tap the pan gently on the counter to release air bubbles.
  8. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. The top should be golden brown and cracked.
  9. Cool in the pan for 10 minutes, then use the parchment paper to lift the bread out and transfer to a cooling rack. Cool completely before slicing (about 1 hour).

Notes

For best results, use very ripe (almost black) bananas. Do not overmix the batter. Let the egg come to room temperature before using. Measure flour by spooning and leveling. For a gluten-free version, use a 1:1 gluten-free baking blend. For a vegan version, replace the egg with a flax egg and use melted coconut oil or vegan butter.
