Cozy Kielbasa and White Bean Soup – Easy One-Pot Dinner

A quick and comforting one-pot soup with smoky kielbasa, creamy white beans, and fresh spinach in a savory broth. Perfect for busy weeknights, this 30-minute meal is budget-friendly and family-approved.

  • 14 ounces kielbasa, sliced into ½-inch rounds
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, peeled and diced
  • 2 stalks celery, diced
  • 4 cups low-sodium chicken broth
  • 2 cans (15 ounces each) cannellini beans, drained and rinsed
  • 1 can (14.5 ounces) fire-roasted diced tomatoes, undrained
  • 3 cups baby spinach
  • 1 teaspoon dried thyme
  • ½ teaspoon dried oregano
  • 1 bay leaf
  • Salt and black pepper to taste
  • Optional garnishes: grated Parmesan cheese, fresh parsley, olive oil

Instructions

  1. Prep all ingredients: dice onion, carrot, and celery; mince garlic; slice kielbasa; drain and rinse beans; open tomatoes; measure broth and spices.
  2. Heat olive oil in a large Dutch oven over medium-high heat. Add kielbasa in a single layer and cook without moving for 3 minutes until deeply browned. Flip and cook another 2-3 minutes. Transfer to a plate.
  3. Reduce heat to medium. Add onion, carrot, and celery to the pot. Cook for about 5 minutes, stirring occasionally, until softened and onion is translucent.
  4. Stir in garlic, thyme, and oregano. Cook for 30 seconds until fragrant.
  5. Pour in ½ cup of chicken broth and scrape the bottom of the pot to deglaze, loosening browned bits.
  6. Add remaining broth, diced tomatoes with juice, drained beans, and bay leaf. Bring to a boil, then reduce heat to low and simmer uncovered for 10 minutes.
  7. Return browned kielbasa to the pot. Stir and cook for another 5 minutes.
  8. Turn off heat. Add spinach in handfuls, stirring gently until wilted (about 1 minute).
  9. Remove bay leaf. Season with salt and pepper to taste. Serve hot with optional garnishes.

Notes

For best flavor, brown the kielbasa well to develop smoky notes. Use low-sodium broth and rinse beans to control salt. Soup thickens as it sits; add broth when reheating. Freezes well for up to 3 months.
