A warm, gooey giant chocolate chip cookie baked in a cast iron skillet, perfect for sharing and comforting any night in.

  • 1/2 cup (115g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (110g) light brown sugar, packed
  • 1 large egg, room temperature
  • 1 1/2 teaspoons pure vanilla extract
  • 1 3/4 cups (220g) all-purpose flour (or gluten-free blend)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups (270g) chocolate chips, mix of semi-sweet and milk chocolate

Instructions

  1. Preheat your oven to 350°F (175°C). Place your 10 or 12-inch cast iron skillet on the stove over low heat to gently warm it while you prepare the dough (about 5 minutes).
  2. In a large mixing bowl, beat 1/2 cup softened unsalted butter, 1/2 cup granulated sugar, and 1/2 cup packed light brown sugar together until light and fluffy (2-3 minutes).
  3. Beat in 1 large room-temperature egg and 1 1/2 teaspoons pure vanilla extract until fully combined.
  4. In a separate bowl, whisk together 1 3/4 cups all-purpose flour, 1/2 teaspoon baking soda, and 1/2 teaspoon salt.
  5. Gradually add the dry ingredients into the wet mixture, mixing on low speed or folding with a spatula until just combined. Do not overmix.
  6. Gently fold in 1 1/2 cups chocolate chips, reserving a few to sprinkle on top.
  7. Carefully spread the dough evenly into the warm cast iron skillet, pressing gently to the edges.
  8. Bake in the preheated oven for 20-25 minutes until edges are golden brown and center looks slightly underbaked but set.
  9. Let the cookie cool in the skillet for at least 10 minutes before serving.

Notes

Warm the cast iron skillet before adding dough to create crispy edges. Do not overmix dough to keep cookie soft and chewy. Remove from oven at 20 minutes for gooey center or 25 minutes for firmer cookie. Let cool 10 minutes before serving. Can substitute coconut oil for butter for dairy-free version and gluten-free flour blend for gluten-free.
