  • ½ cup unsalted butter, softened
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh sage, finely chopped
  • 1½ teaspoons kosher salt (Diamond Crystal)
  • ½ teaspoon freshly ground black pepper
  • ½ cup low-sodium chicken or turkey broth
  • Optional: 1 quartered onion, 2 celery stalks, a few sprigs fresh herbs for aromatics

Instructions

  1. Make the herb butter: In a small bowl, combine softened butter, minced garlic, chopped rosemary, thyme, sage, salt, and pepper. Mix until well combined.
  2. Prep the turkey: Remove turkey from packaging, rinse quickly, and pat dry with paper towels.
  3. Loosen the skin: Gently slide fingers between the skin and meat to create a pocket, being careful not to tear the skin.
  4. Apply the herb butter: Spread two-thirds of the butter under the skin directly onto the meat. Spread remaining one-third over the outside of the skin.
  5. Set up the crockpot: Pour broth into the bottom of a 6-7 quart slow cooker. Add optional aromatics if desired. Place turkey breast-side up in the pot.
  6. Cook low and slow: Cover and cook on LOW for 4 to 5 hours, until internal temperature reaches 165°F (74°C) in the thickest part of the breast.
  7. Rest before carving: Carefully transfer turkey to a cutting board and let rest uncovered for 10-15 minutes.
  8. Carve and serve: Slice against the grain and drizzle with cooking juices if desired.

Notes

For a thicker gravy, strain the cooking juices, bring to a simmer, and whisk in a slurry of 1 tablespoon cornstarch mixed with 2 tablespoons cold water. Cook until thickened. To make dairy-free, use a high-quality vegan butter stick. For a lower-sodium version, use unsalted butter and reduce added salt to 1 teaspoon with low-sodium broth.
