  • 2 stalks celery, diced (about 1/2 cup / 60g)
  • 4 cups (960ml) low-sodium beef broth
  • 1 cup (240ml) whole milk
  • 8 oz (225g) Velveeta cheese, cubed
  • 1 cup (100g) sharp cheddar cheese, shredded
  • 1 tablespoon (15ml) Worcestershire sauce
  • 1 teaspoon (5ml) Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional toppings: crumbled bacon, chopped green onions, extra shredded cheddar, dill pickle slices

Instructions

  1. Brown the beef: Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a wooden spoon, until no longer pink, about 5 minutes. Drain off excess fat, leaving about 1 tablespoon in the pan.
  2. Sauté the aromatics: Add the diced onion to the skillet with the beef and cook for 2 minutes until softened. Stir in the minced garlic and cook for 30 seconds until fragrant.
  3. Transfer to the crockpot: Dump the beef and onion mixture into a 6-quart slow cooker.
  4. Add the veggies and broth: Add the cubed potatoes, diced carrots, and diced celery to the crockpot. Pour in the beef broth and stir everything together.
  5. Season and cook: Stir in the Worcestershire sauce, Dijon mustard, 1 teaspoon salt, and 1/2 teaspoon black pepper. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the potatoes are fork-tender.
