  • 1 medium yellow onion, diced (about 1 cup)
  • 2 large carrots, peeled and diced (about 1 cup)
  • 2 celery stalks, diced (about ½ cup)
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 6 cups low-sodium chicken broth
  • 1 cup wild rice, rinsed
  • 1 bay leaf
  • 1 ½ pounds boneless, skinless chicken thighs
  • 1 cup heavy cream
  • 1 tablespoon all-purpose flour (optional, for thickening)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Melt the butter in a large Dutch oven or heavy-bottomed pot over medium heat. Add the diced onion, carrots, and celery. Cook for 5-7 minutes, stirring occasionally, until the onions are translucent and the carrots start to soften.
  2. Add the minced garlic, thyme, rosemary, salt, and pepper. Cook for one more minute until the garlic is fragrant.
  3. Pour in the chicken broth and stir to scrape up any browned bits from the bottom of the pot. Add the rinsed wild rice and the bay leaf. Bring to a boil, then reduce heat to low, cover, and simmer for 30 minutes.
  4. After 30 minutes, nestle the chicken thighs into the broth. Cover and simmer for another 15-20 minutes, or until the chicken is cooked through and tender (internal temperature of 165°F).
  5. Use tongs to transfer the cooked chicken to a cutting board. Let cool slightly, then shred with two forks. Discard the bay leaf from the pot.
  6. In a small bowl, whisk together the heavy cream and flour (if using) until smooth. Ladle about ½ cup of hot broth into the cream mixture and whisk constantly to temper it.
  7. Pour the tempered cream mixture back into the pot and stir well. Add the shredded chicken back to the pot. Simmer for another 5-10 minutes on low heat, uncovered, until the soup thickens slightly. Taste and adjust salt and pepper as needed.
  8. Ladle into bowls, garnish with fresh parsley, and serve immediately.

Notes

Temper the cream to prevent curdling. Chicken thighs stay juicier than breasts. Soup thickens as it sits; add broth when reheating. For best flavor, make a day ahead.
