Ingredients

  • Turkey breast (bone-in, skin-on, about 3-4 lbs)
  • Whole berry cranberry sauce (1 can or about 1 ½ cups homemade)
  • Orange (1 large)
  • Unsalted butter (2 tablespoons, softened)
  • Brown sugar (2 tablespoons, packed)
  • Dijon mustard (1 tablespoon)
  • Garlic (2 cloves, minced)
  • Fresh rosemary (1 tablespoon, chopped)
  • Salt and black pepper (to taste)
  • Olive oil (1 tablespoon)
  • Chicken or turkey broth (½ cup)

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the lower third of the oven.
  2. Pat the turkey breast completely dry with paper towels. Let it sit on the counter for 20-30 minutes to take the chill off.
  3. Season the turkey with salt and pepper all over, including under the skin if you can. Rub the olive oil over the skin, then sprinkle the chopped rosemary and minced garlic over the top.
  4. Make the glaze: In a small saucepan over medium heat, combine the cranberry sauce, orange zest (about 1 tablespoon), orange juice (about 2 tablespoons), brown sugar, Dijon mustard, and butter. Stir until the butter melts and everything is well combined. Let it simmer for 2-3 minutes, then remove from heat. Set aside about ¼ cup of the glaze for serving.
  5. Place the turkey breast on a wire rack set inside your roasting pan. Pour the broth into the bottom of the pan — not over the turkey.
  6. Roast the turkey for 30 minutes without any glaze.
  7. After 30 minutes, brush a generous layer of the cranberry orange glaze over the turkey. Return to the oven. Repeat this every 15 minutes for the next 45-60 minutes, until the internal temperature reaches 160°F (71°C) in the thickest part of the breast.
  8. Check for doneness: The turkey is done when the thermometer reads 160°F (71°C). The temperature will rise to 165°F (74°C) as it rests. If the skin is browning too quickly, tent loosely with foil.
  9. Rest the turkey: Remove from the oven and let it rest on the rack for 15-20 minutes.
  10. Slice and serve: Carve the breast against the grain into thick slices. Drizzle with the reserved glaze and spoon some of the pan juices over the top.

Notes

Don’t skip the drying step for crispy skin. Use a meat thermometer for accuracy. Let the glaze set between layers for a sticky crust. If the glaze starts to burn, tent with foil. Make extra glaze for serving. Let the turkey rest for 15-20 minutes before slicing.
