Ingredients

Scale
  • 6 medium apples, peeled, cored, and sliced into ¼-inch thick pieces (mix of Granny Smith and Honeycrisp recommended)
  • ¼ cup granulated sugar
  • 2 tablespoons brown sugar, packed
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 2 tablespoons all-purpose flour
  • 1 tablespoon unsalted butter
  • 1 cup rolled oats
  • ½ cup all-purpose flour
  • ¼ cup almond flour
  • ½ cup brown sugar, packed
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup unsalted butter, cold and cut into small cubes

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center of the oven.
  2. Peel, core, and slice your apples into ¼-inch thick pieces.
  3. In a large skillet over medium heat, melt 1 tablespoon of butter. Add the sliced apples, granulated sugar, brown sugar, lemon juice, cinnamon, and nutmeg. Stir and cook for 5-7 minutes until the apples release their juices and the sugar dissolves. Sprinkle 2 tablespoons of flour over the apples and stir for another minute. Remove from heat.
  4. In a medium mixing bowl, combine rolled oats, all-purpose flour, almond flour, brown sugar, cinnamon, and salt. Whisk together. Add cold butter cubes and work into the dry ingredients using a pastry cutter, fork, or fingers until the mixture resembles coarse crumbs with some pea-sized butter pieces.
  5. Pour the cooked apple mixture into an 8×8-inch baking dish and spread evenly. Sprinkle the oat streusel evenly over the top without pressing down.
  6. Place the dish on a baking sheet and bake for 35-40 minutes, until the streusel is golden brown and the apple filling is bubbling around the edges.
  7. Let the crisp cool for at least 10-15 minutes before serving to allow the filling to set.

Notes

For best results, use cold butter for the streusel and don’t skip the stovetop step for the apples. Let the crisp rest for 10-15 minutes after baking to allow the filling to set. For a gluten-free version, use certified gluten-free oats and a 1:1 gluten-free baking blend. For a vegan version, substitute butter with coconut oil or vegan butter.
