Instructions

  1. Brown the butter: Place 1/2 cup unsalted butter in a light-colored saucepan over medium heat. Stir constantly until the butter melts, foams, and turns golden brown with a nutty aroma (about 4-5 minutes). Immediately remove from heat and pour into a heatproof bowl. Let cool for 10 minutes.
  2. Mix the wet ingredients: In a large bowl, whisk together the cooled brown butter, 1/2 cup packed light brown sugar, and 1/4 cup granulated sugar until well combined. Add 1/2 cup pumpkin puree, 1 large egg (room temperature), and 1 teaspoon vanilla extract. Whisk until smooth.
  3. Combine the dry ingredients: In a medium bowl, whisk together 1 1/2 cups all-purpose flour, 1/2 teaspoon baking soda, 1/2 teaspoon baking powder, 1 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg, 1/4 teaspoon ground ginger, and 1/2 teaspoon salt.
  4. Fold it all together: Pour the dry ingredients into the wet ingredients. Fold gently with a rubber spatula until just combined. Fold in 1 cup semi-sweet chocolate chips until evenly distributed. The dough will be soft and slightly sticky.
  5. Chill the dough (optional but recommended): Cover the bowl with plastic wrap and refrigerate for 30 minutes.
