Cozy Apple Cider Mimosa with Cinnamon Rim – Best Easy Fall Brunch Drink

A quick and easy fall brunch drink featuring tart apple cider, crisp sparkling wine, and a cinnamon-sugar rim. Perfect for cozy mornings and festive gatherings.

  • 1/4 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • Pinch of nutmeg (optional)
  • 3/4 cup apple cider per glass
  • 3/4 cup Prosecco or dry sparkling wine per glass
  • 1 star anise pod per glass (for garnish)
  • Fresh thyme or rosemary sprig (optional)
  • Ice (optional)

Instructions

  1. Prepare your rimming station. Pour the 2 tablespoons of honey onto a small plate. In a separate shallow dish, whisk together the 1/4 cup of granulated sugar, 2 teaspoons of ground cinnamon, and a pinch of nutmeg if using.
  2. Rim the glasses. Take a champagne flute or coupe glass and dip the rim into the honey, rotating gently to coat a band about 1/4 inch wide. Let any excess honey drip off, then dip the rim into the cinnamon sugar mixture. Press lightly and twist to ensure even coverage. Set aside to let the rim set for about 2 minutes.
  3. Chill your glasses (optional but nice). If you have time, pop the rimmed glasses in the fridge for 10 minutes.
  4. Pour the apple cider. Fill each glass about halfway with apple cider—roughly 3/4 cup. Pour slowly down the side of the glass to avoid disturbing the rim.
  5. Top with sparkling wine. Slowly pour the Prosecco or sparkling wine over the back of a spoon held just above the cider. Fill the glass to about an inch from the rim.
  6. Add garnishes. Drop in a star anise pod and a sprig of fresh thyme or rosemary. For a pretty touch, float a thin slice of apple on top.
  7. Serve immediately. This drink is best enjoyed within 5 minutes of assembling.

Notes

The rim is everything—don’t rush it. Use cold cider and cold sparkling wine for best results. This drink is best served immediately; do not assemble ahead of time. For a non-alcoholic version, use dry sparkling cider or non-alcoholic sparkling wine.
