This Cozy Apple Cider Donut Bundt Cake tastes exactly like those apple cider donuts you get at the orchard, but in bundt cake form—softer, moister, and way less fussy to make. It’s simple, cozy, and the perfect fall dessert for any gathering.

Ingredients

Scale
  • 1 ½ cups (360 ml) apple cider
  • ½ cup (113 g) unsalted butter, softened
  • 1 cup (200 g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups (250 g) all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 tablespoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ½ cup (120 ml) buttermilk, room temperature
  • For the cinnamon-sugar coating:
  • ¼ cup (57 g) melted butter
  • ½ cup (100 g) granulated sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Generously grease a 10-cup bundt pan with butter or non-stick baking spray, then dust with flour and tap out excess.
  2. Pour 1 ½ cups apple cider into a small saucepan. Bring to a boil over medium-high heat, then reduce heat to medium-low and simmer until reduced to about ½ cup, about 15-20 minutes. Let cool completely.
  3. In a large mixing bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves for about 30 seconds.
  4. In a medium mixing bowl, beat softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
  5. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
  6. Alternate adding dry ingredients and buttermilk to the butter mixture, starting and ending with dry ingredients. Stir in cooled reduced apple cider until just combined. Do not overmix.
  7. Pour batter into prepared bundt pan and spread evenly. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Let cake cool in pan for exactly 10 minutes. Place a cooling rack over the pan and carefully invert the cake. Lift pan off gently.
  9. While cake is still warm, brush entire surface with melted butter. Generously sprinkle or roll cake in cinnamon-sugar mixture (½ cup sugar + 1 tablespoon cinnamon).
  10. Let cake cool completely on rack before slicing.

Notes

Don’t skip reducing the apple cider—it concentrates the flavor. Room temperature ingredients are crucial for best texture. Grease the bundt pan generously to prevent sticking. Let cake cool in pan for exactly 10 minutes before inverting. Apply cinnamon-sugar coating while cake is still warm for best adhesion. Cake tastes even better the next day.
