Instructions

  1. Prep your ingredients first: dice the onion, mince the garlic, shred the cheddar cheese, and cut the chicken into bite-sized pieces.
  2. Melt the butter in a large skillet or Dutch oven over medium heat. Add the diced onion and cook for 3-4 minutes until soft and translucent.
  3. Add the minced garlic and cook for another 30 seconds until fragrant. Do not let it burn.
  4. Add the chicken pieces to the skillet. Season with salt, pepper, paprika, and dried thyme. Cook for 5-7 minutes, stirring occasionally, until browned on all sides but not necessarily cooked through.
  5. In a mixing bowl, whisk together the cream of chicken soup, sour cream, and chicken broth until smooth.
