These quick maple pumpkin chocolate chip muffins are tender, moist, and full of warm fall flavors. Ready in under 30 minutes, they’re perfect for busy weeknights and sure to be a crowd-pleaser.

  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • 1 cup (240g) pumpkin puree
  • ½ cup (160ml) maple syrup
  • 1 large egg, room temperature
  • ¼ cup (60ml) vegetable oil
  • ¼ cup (60ml) milk
  • 1 teaspoon vanilla extract
  • ¾ cup (130g) semi-sweet or dark chocolate chips

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large mixing bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger until evenly distributed.
  3. In a medium mixing bowl, whisk together the wet ingredients: pumpkin puree, maple syrup, egg, vegetable oil, milk, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients. Fold gently with a rubber spatula just until no streaks of flour remain (about 10-12 strokes). Do not overmix.
  5. Fold in the chocolate chips, reserving about 1 tablespoon for topping. Gently fold until evenly distributed.
  6. Divide the batter evenly among the 12 muffin cups. Sprinkle the reserved chocolate chips on top.
  7. Bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. The tops should be golden and spring back when lightly pressed.
  8. Let the muffins cool in the pan for 5 minutes, then transfer to a cooling rack to cool completely.

Notes

For best results, use real maple syrup (not pancake syrup) and fresh baking powder. Do not overmix the batter. Muffins can be stored in an airtight container at room temperature for up to 3 days or frozen for up to 3 months.
