  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice (fresh squeezed is best, but bottled works)

  • 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)
  • 16 ounces cream cheese, softened to room temperature (Philadelphia is my go-to for consistent results)
  • 1 cup powdered sugar, sifted (no lumps allowed here)
  • 2 teaspoons vanilla extract
  • 2 cups heavy whipping cream, cold
  • 1/4 cup powdered sugar (for the whipped cream)
  • 1 box (about 14 ounces) graham crackers (you’ll need about 3 sleeves)
  • 1/2 cup unsalted butter, melted (for brushing the graham crackers, optional but recommended)
  • 1 cup heavy whipping cream, cold
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • Fresh peach slices and mint leaves for garnish (optional but pretty)

Instructions

  1. Prepare the Peach Filling: In a medium saucepan over medium heat, combine the sliced peaches, 1/4 cup granulated sugar, lemon juice, vanilla extract, and cinnamon. Stir gently and cook for about 5-7 minutes until the peaches start releasing their juices and soften slightly. In a small bowl, whisk together the cornstarch and water until smooth. Pour this slurry into the peaches and stir continuously for 2-3 minutes until the mixture thickens. Remove from heat and let it cool completely.
  2. Make the Cream Cheese Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2 minutes. Add the sifted powdered sugar and vanilla extract, and beat until combined, scraping down the sides as needed. In a separate bowl, whip the heavy cream and 1/4 cup powdered sugar until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture in three additions, using a spatula. Fold until just combined.
  3. Prep the Graham Crackers: If using the melted butter option, brush one side of each graham cracker with a thin layer of melted butter. Break any crackers as needed to fit your dish, but try to keep them as whole as possible.
  4. Layer the Cake: Spread a thin layer of the cream filling (about 1/2 cup) on the bottom of your 9×13-inch dish. Arrange a single layer of graham crackers on top, breaking pieces to fill gaps. Spread half of the remaining cream filling evenly over the crackers. Spoon half of the cooled peach mixture over the cream filling and spread gently. Repeat with another layer of graham crackers, the remaining cream filling, and the remaining peaches. Top with a final layer of graham crackers.
  5. Make the Topping: In a clean bowl, whip the remaining 1 cup heavy cream with 2 tablespoons powdered sugar and 1/2 teaspoon vanilla extract until soft peaks form. Spread this over the top layer of graham crackers, creating swirls with the back of a spoon if desired. Cover the dish tightly with plastic wrap and refrigerate for at least 6 hours, but overnight is best.

Notes

Don’t rush the chilling time—6 hours is the minimum, overnight is best. Use room temperature cream cheese to avoid lumps. Fold the whipped cream into the cream cheese gently to keep the filling light. Drain canned or frozen peaches well to avoid excess liquid. Chill your bowl and beaters before whipping cream for best results. The cake improves after the first day as flavors meld.
