This creamy, cheesy corn casserole uses Jiffy mix, sour cream, and sharp cheddar for a moist, custard-like texture. It’s the perfect side dish for potlucks, holidays, or any comfort food craving.

  • 2 boxes (8.5 oz each) Jiffy Corn Muffin Mix
  • 1 cup full-fat sour cream
  • 2 cups shredded sharp cheddar cheese, divided
  • ½ cup (1 stick) unsalted butter, melted
  • 1 can (15.25 oz) whole kernel corn, drained
  • 1 can (14.75 oz) creamed corn, undrained
  • 2 large eggs, room temperature
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Melt ½ cup unsalted butter in a microwave-safe bowl; set aside to cool slightly.
  3. Shred sharp cheddar cheese; divide into 1 cup for batter and 1 cup for topping.
  4. Drain whole kernel corn in a colander; let sit to remove excess liquid.
  5. In a large mixing bowl, whisk together 2 room-temperature eggs and 1 cup sour cream until smooth. Add melted butter and whisk until fully incorporated.
  6. Stir in drained whole kernel corn and undrained creamed corn until evenly distributed.
  7. Sprinkle both boxes of Jiffy Corn Muffin Mix, ½ teaspoon salt, and ¼ teaspoon black pepper over the mixture. Stir gently with a rubber spatula until just combined (do not overmix).
  8. Fold in 1 cup shredded cheddar cheese until evenly distributed.
  9. Pour batter into prepared baking dish; spread evenly. Tap dish gently on counter to release air bubbles.
  10. Sprinkle remaining 1 cup shredded cheddar evenly over the top.
  11. Bake on middle rack for 45-50 minutes, until edges are golden brown and center is set (toothpick inserted comes out clean or with moist crumbs).
  12. Let casserole rest on a wire rack for 10-15 minutes before serving.

Notes

For best results, shred your own cheddar cheese (pre-shredded contains anti-caking agents that affect melting). Use room temperature eggs to prevent butter from seizing. Let casserole rest after baking to set properly. If top browns too quickly, tent with foil for last 10 minutes.
