Ingredients

Scale
  • 16 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • Orange gel food coloring
  • Yellow gel food coloring
  • 8 oz prosciutto, thinly sliced
  • 8 oz salami, sliced
  • 6 oz pepperoni slices
  • 8 oz sharp cheddar cheese, cubed
  • 6 oz gouda cheese, sliced
  • 1 cup mixed olives
  • 1 cup cornichons or pickles
  • 1 cup grapes, red and green
  • 1 cup cherry tomatoes
  • 8 oz assorted crackers
  • 1/2 cup almonds or pecans
  • Fresh rosemary sprigs and edible flowers for garnish (optional)

Instructions

  1. Make the Candy Corn Cheese Base (15 minutes): In a large mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat with a hand mixer on medium speed until smooth and fluffy, about 2-3 minutes.
  2. Divide and Color the Cheese (5 minutes): Split the cream cheese mixture into three equal portions in separate small bowls. Leave one portion white. Add yellow food coloring to the second portion and mix until bright yellow. Add orange food coloring to the third portion and mix until vibrant orange.
  3. Layer the Cheese (10 minutes): Lay a large piece of plastic wrap on a clean surface. Spread the white cream cheese mixture into a rectangle about 6 inches long and 3 inches wide. Gently spread the yellow layer on top of the white, then the orange layer on top of the yellow. Use the plastic wrap to shape the cheese into a log, rolling tightly and twisting the ends. Refrigerate for at least 30 minutes to firm up.
  4. Prepare the Board (10 minutes): While the cheese chills, arrange your charcuterie board. Place small bowls for olives, pickles, and nuts. Arrange the meats in folded ribbons or rolled rosettes around the board.
  5. Add the Cheeses and Produce (10 minutes): Cube the cheddar and slice the gouda, placing them in separate areas. Scatter grapes and cherry tomatoes in small groups. Fill in gaps with crackers.
  6. Slice and Place the Candy Corn Cheese (5 minutes): Remove the cheese from the fridge. Unwrap and slice into 1/2-inch rounds. Place the slices in a row or cluster in the center of the board.
  7. Garnish and Serve (5 minutes): Add fresh rosemary sprigs and edible flowers. Serve immediately or refrigerate until ready. The board can be assembled up to 2 hours ahead—add crackers and garnishes right before serving.

Notes

Make the candy corn cheese the night before for best results. Let cream cheese come to room temperature before mixing. Use gel food coloring for vibrant colors. The board can be assembled up to 2 hours ahead; add crackers and garnishes just before serving. Store leftover candy corn cheese in an airtight container in the refrigerator for up to 5 days.
