A quick and stunning summer salad featuring smoky grilled peaches, creamy burrata, peppery arugula, and a vibrant basil oil. Ready in just 20 minutes, it’s perfect for warm-weather entertaining or a simple weeknight dinner.

  • 4 ripe but firm peaches, halved and pitted
  • 8 ounces burrata cheese (2 small balls)
  • 4 cups fresh arugula
  • 2 tablespoons olive oil (for grilling peaches)
  • Flaky sea salt (e.g., Maldon)
  • Freshly cracked black pepper
  • 1/4 cup toasted pine nuts or walnuts (optional)
  • 2 tablespoons balsamic glaze (optional)
  • 1 cup fresh basil leaves, packed tightly
  • 1/2 cup extra virgin olive oil
  • 1 small clove garlic, minced
  • 1/4 teaspoon salt
  • Pinch of red pepper flakes (optional)

Instructions

  1. Make the basil oil: In a small food processor or blender, combine packed basil leaves, 1/2 cup extra virgin olive oil, minced garlic, 1/4 teaspoon salt, and a pinch of red pepper flakes (if using). Pulse until basil is finely chopped and oil is bright green. Transfer to a small bowl and set aside.
  2. Preheat grill or grill pan to medium-high heat (about 400°F/200°C). Brush cut sides of peach halves with 2 tablespoons olive oil.
  3. Grill peaches cut-side down for 3-4 minutes without moving, until deep grill marks appear. Flip and cook for 1-2 minutes on skin side. Peaches should be tender but hold their shape. Remove and let cool slightly (about 2 minutes).
  4. Slice each peach half into 3-4 wedges.
  5. Spread arugula on a large serving platter. Arrange grilled peach wedges over greens. Tear burrata into pieces with your hands and scatter over the salad.
  6. Drizzle basil oil generously over everything. Sprinkle with flaky sea salt and freshly cracked black pepper. Add toasted pine nuts and balsamic glaze if using. Serve immediately.

Notes

Use ripe but firm peaches to avoid mushiness. Make basil oil ahead (up to 5 days) and press plastic wrap onto surface to prevent browning. Serve immediately for best texture contrast. For dairy-free, substitute burrata with cashew-based cheese or omit cheese and add more nuts.
