Rich and fudgy mini brownie bites decorated to look like football helmets, perfect for game-day parties. These adorable treats are surprisingly easy to make and always impress guests.

  • 1 cup granulated sugar
  • 2 large eggs (room temperature)
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 cup unsalted butter (softened to room temperature, for frosting)
  • 1 1/2 cups powdered sugar
  • 2 tablespoons heavy cream (or milk)
  • 1/2 teaspoon vanilla extract (for frosting)
  • Gel food coloring (team colors)
  • Mini chocolate chips (for facemask details)
  • White frosting or melted white chocolate (for team numbers or stripes)
  • Sprinkles in team colors (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 24-cup mini muffin pan generously with butter or non-stick spray.
  2. In a medium microwave-safe bowl, melt the butter in 30-second intervals. Let cool for about 2 minutes until warm but not steaming.
  3. Whisk the sugar into the melted butter until well combined. Add eggs one at a time, whisking well after each addition. Stir in vanilla extract.
  4. In a separate bowl, sift together cocoa powder, flour, salt, and baking powder. Gradually fold dry ingredients into wet mixture using a rubber spatula until just combined.
  5. Spoon batter into prepared mini muffin cups, filling each about 2/3 full. You should get about 24 brownie bites.
  6. Bake for 10-12 minutes until edges are set and tops are slightly cracked and shiny. A toothpick inserted in center should come out with moist crumbs, not wet batter.
  7. Let brownie bites cool in pan for exactly 5 minutes, then transfer to a wire rack to cool completely.
  8. For frosting: Beat softened butter until smooth and creamy. Gradually add powdered sugar, about 1/2 cup at a time, beating on low speed. Add heavy cream and vanilla extract, then beat on medium speed for 2 minutes until light and fluffy.
  9. Divide frosting into separate bowls for each team color. Add gel food coloring a tiny drop at a time until desired shade is achieved.
  10. Transfer each colored frosting to a piping bag fitted with a small round tip. Pipe a dome shape on top of each cooled brownie bite, then smooth into a helmet shape using a small offset spatula or butter knife.
  11. While frosting is still soft, press two mini chocolate chips into the front of each helmet for the facemask. Pipe small stripes or numbers on sides using white frosting or melted white chocolate.
  12. Let decorated brownie bites sit at room temperature for about 15 minutes to allow frosting to set, or refrigerate for 5 minutes if in a hurry.

Notes

Don’t overbake – brownies continue cooking after coming out of oven. Use room temperature ingredients for best results. Chill piping bags if kitchen is warm. Work in batches of 6-8 when frosting. If frosting is too runny, refrigerate for 10-15 minutes. For gluten-free version, use 1:1 gluten-free flour blend. For vegan version, use flax eggs and vegan butter. Brownie bites can be frozen undecorated for up to 3 months.
