Best Eyeball Deviled Eggs Halloween Recipe

These spooky eyeball deviled eggs are the perfect Halloween party appetizer. Creamy, tangy filling with a briny olive center that looks like an eyeball, simple to make with everyday ingredients.

  • 12 large eggs
  • 1 tablespoon white vinegar
  • 1 teaspoon salt
  • 1/3 cup mayonnaise
  • 1 teaspoon yellow mustard
  • 1/2 teaspoon white vinegar
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 12 pimento-stuffed green olives
  • Black food coloring gel
  • Red food coloring gel (optional)
  • 1 teaspoon olive brine

Instructions

  1. Place eggs in a single layer in a saucepan. Cover with cold water by 1 inch. Add 1 tablespoon white vinegar and 1 teaspoon salt. Bring to a rolling boil over high heat. Cover, remove from heat, and let sit for exactly 12 minutes.
  2. Prepare a large bowl of ice water. Transfer eggs immediately to the ice bath and let sit for at least 10 minutes.
  3. Gently tap each egg to crack the shell, roll between palms, and peel starting from the wider end. Rinse under cool water and pat dry.
  4. Slice each egg in half lengthwise. Remove yolks to a mixing bowl. Arrange egg white halves on a serving platter.
  5. Mash yolks with a fork until crumbly. Add mayonnaise, yellow mustard, 1/2 teaspoon white vinegar, 1/4 teaspoon salt, black pepper, and 1/4 teaspoon paprika. Mix until smooth and creamy. Adjust seasoning to taste.
  6. Drain olives and pat dry. Using a toothpick, dab a tiny dot of black food coloring onto the center of each olive’s pimento to create the pupil. Optionally, add red food coloring lines for bloodshot veins. Let set for 1 minute.
  7. Spoon filling into a piping bag or zip-top bag with a corner snipped off. Pipe a generous dollop into each egg white half, mounding slightly.
  8. Gently press one prepared olive into the center of each filled egg white, pimento side up. Brush each olive with a drop of olive brine for a glossy look.
  9. Lightly sprinkle paprika over the platter. Refrigerate for at least 30 minutes before serving.

Notes

Use eggs that are at least a week old for easier peeling. For best results, make the filling and eggs a day ahead, but add olive garnish just before serving. The filling can be adjusted with more salt or paprika to taste. If you don’t have food coloring, skip the pupil or use a poppy seed.
