Instructions

  1. Reduce the apple cider: Pour 1/2 cup apple cider into a small saucepan. Bring to a boil over medium-high heat, then reduce heat to medium-low and simmer until reduced to about 3 tablespoons (8-10 minutes). Set aside to cool slightly.
  2. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
  3. In a large bowl, beat softened butter, granulated sugar, and brown sugar together until light and fluffy (2-3 minutes with a hand mixer, or 4 minutes by hand).
  4. Beat in egg and vanilla extract until well combined. Add reduced apple cider and mix until just incorporated.
  5. In a separate bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and cloves.
  6. Gradually add dry ingredients to wet mixture, mixing on low speed or stirring by hand until just combined. Do not overmix.

  8. Drop rounded tablespoons of dough onto prepared baking sheets, spacing 2 inches apart. Bake for 10-12 minutes, until edges are golden brown and centers are set but still soft.
