  • 3 bell peppers (assorted colors), sliced into 1/2-inch strips

  • 1 teaspoon caraway seeds
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Slice bell peppers into 1/2-inch strips and onion into thin half-moons.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add sausages and cook, turning occasionally, until browned on all sides, about 5-7 minutes. Transfer to a plate.
  3. In a large mixing bowl, combine sliced peppers, onions, remaining 2 tablespoons olive oil, caraway seeds, smoked paprika, garlic powder, and a generous pinch of salt and pepper. Toss well.
  4. Spread seasoned vegetables in an even layer on a large sheet pan. Nestle seared sausages among the vegetables.
  5. Roast for 20 minutes, then flip sausages and stir vegetables. Return to oven and roast for another 5-10 minutes until sausages are cooked through (internal temperature 160°F / 71°C) and peppers are tender and slightly charred.
  6. Remove from oven and let rest for 5 minutes. Garnish with fresh parsley if desired. Serve hot.
