Ingredients

Scale
  • 1 rotisserie chicken, shredded (about 34 cups)
  • 1/2 cup hot sauce (recommended: Frank’s RedHot Original)
  • 1/4 cup unsalted butter, melted
  • 1 tablespoon white vinegar
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (optional)
  • 8 ounces cream cheese, softened
  • 1 cup ranch dressing
  • 1 cup blue cheese dressing
  • 8 ounces sharp cheddar cheese, sliced or cubed
  • 8 ounces pepper jack cheese, sliced
  • 1 cup celery sticks
  • 1 cup carrot sticks
  • 1 cup cucumber rounds
  • 1 box crackers (recommended: buttery Ritz or sturdy wheat crackers)
  • 1 cup pretzel sticks
  • 1/2 cup pickled jalapeños
  • Fresh parsley or chives, chopped (for garnish)
  • Cherry tomatoes, halved (optional)
  • Olives (optional)
  • Nuts (optional)
  • Dried fruit (optional)

Instructions

  1. Make the buffalo sauce: In a medium saucepan over low heat, combine 1/2 cup hot sauce, 1/4 cup melted butter, 1 tablespoon white vinegar, and 1/2 teaspoon garlic powder. Whisk until smooth and heated through, about 2-3 minutes. Do not let it boil.
  2. Prepare the chicken: While the sauce heats, shred the rotisserie chicken. Remove skin and bones, and pull the meat into bite-sized pieces using two forks or your hands. You should have about 3-4 cups of shredded chicken. Place in a medium mixing bowl.
  3. Combine chicken and sauce: Pour the warm buffalo sauce over the shredded chicken. Use a spatula to toss everything together until every piece is coated.
  4. Warm the chicken (optional but recommended): Transfer the sauced chicken back to the saucepan and warm over low heat for 3-4 minutes, stirring occasionally.
  5. Set up your dips: Place the softened cream cheese in a small bowl. Pour the ranch dressing and blue cheese dressing into separate small ramekins or bowls. Arrange these on your board first.
  6. Arrange the cheeses: Slice the cheddar and pepper jack into thin squares or triangles. Fan them out in small clusters around the board.
  7. Add the veggies: Scatter the celery sticks, carrot sticks, and cucumber rounds in small piles around the board, near the dips.
  8. Add the crackers and pretzels: Arrange them in small stacks or lines along the edges of the board.
  9. Place the buffalo chicken: Spoon the warm buffalo chicken into a small bowl or pile it directly on the board. If piling directly, create a well in the center of the board.
  10. Add the extras: Scatter pickled jalapeños, cherry tomatoes, olives, or other optional add-ins around the board. Sprinkle fresh parsley or chives over the chicken and cheese.
  11. Garnish and serve: Fill any empty gaps with extra crackers or veggies. Serve immediately while the chicken is still warm. Provide small plates, napkins, and tongs.

Notes

Don’t overcook the sauce—low heat and constant whisking are key. Use room temperature cream cheese for easy spreading. Keep the chicken separate from crackers to prevent sogginess. Prep all ingredients before assembling. Make extra buffalo chicken as it disappears first. Leftover chicken can be used for wraps, salads, or quesadillas.
