These cinnamon apple chips are a healthy, crunchy snack made with just apples, cinnamon, and a touch of sugar. Baked low and slow until perfectly crispy, they’re a guilt-free treat that fills your kitchen with the warm aroma of fall.

  • 3 large apples (firm varieties like Honeycrisp, Fuji, or Granny Smith)
  • 1 teaspoon ground cinnamon
  • 1 tablespoon granulated sugar (optional, or use coconut sugar)
  • Pinch of salt

Instructions

  1. Preheat your oven to 225°F (107°C). Line two large baking sheets with parchment paper or silicone baking mats.
  2. Wash and dry the apples thoroughly. Do not peel them.
  3. Core the apples using an apple corer or by cutting into quarters and removing the core with a knife.
  4. Slice the apples as thinly as possible, aiming for 1/8-inch thick slices (about the thickness of a coin). Use a mandoline set to 2mm if available.
  5. In a small bowl, mix the cinnamon, sugar, and salt until well combined.
  6. Place the apple slices in a large bowl and sprinkle the cinnamon-sugar mixture over them. Toss gently with your hands to coat each slice evenly.
  7. Arrange the slices in a single layer on the prepared baking sheets, ensuring they do not overlap.
  8. Bake for 1 hour. After 1 hour, flip each slice over using a spatula or your fingers.
  9. Bake for another 1 to 1 ½ hours, until the chips are dry to the touch, slightly curled at the edges, and a few have turned light golden brown around the borders.
  10. Turn off the oven and leave the chips inside for 15 minutes to help them crisp up as they cool slowly.
  11. Transfer the chips to a cooling rack and let them cool completely for at least 30 minutes before storing or eating.

Notes

For best results, slice apples uniformly 1/8-inch thick. Do not crowd the pan—overlapping causes steaming instead of drying. Rotate baking sheets halfway through baking for even drying. Let chips cool completely before storing to maintain crispiness. If chips soften, re-crisp in a 250°F oven for 5-10 minutes.
