Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Wash the delicata squash thoroughly, pat dry, and cut off both ends. Slice crosswise into ½-inch thick rings. Scoop out seeds and stringy pulp from the center of each ring.
  3. In a large mixing bowl, whisk together maple syrup, olive oil, salt, black pepper, smoked paprika, and cayenne (if using) until well combined.
  4. Add the squash rings to the bowl and toss gently until every ring is evenly coated with the glaze.
  5. Arrange the glazed rings in a single layer on the prepared baking sheet, leaving space between each ring to ensure even roasting.
  6. Roast for 15 minutes, until the rings start to brown around the edges.
  7. Remove from the oven, flip each ring using tongs, and return to the oven. Roast for another 10-15 minutes, until golden brown, caramelized, and crispy on the edges, and tender when pierced with a fork.
  8. Immediately sprinkle with flaky sea salt and fresh herbs if using. Serve hot.

Notes

For extra crispiness, ensure the oven is fully preheated and do not overcrowd the baking sheet. If the edges brown too quickly, tent loosely with foil. Leftover rings can be stored in an airtight container in the refrigerator for up to 3 days; reheat in a 400°F oven for 5-7 minutes or in an air fryer at 375°F for 3-4 minutes to restore crispiness.
