  • 2 tablespoons (25g) brown sugar

  • 1 teaspoon salt
  • ½ cup (120g) baking soda
  • 10 cups (2.4 liters) water
  • 23 tablespoons coarse sea salt or pretzel salt
  • 3 tablespoons (42g) melted butter (for brushing)
  • 8 ounces (225g) sharp cheddar cheese, freshly shredded
  • ¾ cup (180ml) beer (malty brown ale, Oktoberfest lager, or stout)
  • 2 ounces (56g) cream cheese, softened
  • 1 tablespoon Dijon mustard
  • ½ teaspoon garlic powder
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine warm water (110°F), brown sugar, and active dry yeast. Stir gently and let sit for 5-10 minutes until foamy.
  2. Add melted butter, salt, and 2 cups of bread flour to the yeast mixture. Stir until combined, then gradually add remaining 1 ½ cups flour. Dough should be shaggy but not sticky.
  3. Turn dough onto a lightly floured surface and knead for 8-10 minutes (or use stand mixer with dough hook on medium for 6 minutes) until smooth and elastic.
  4. Place dough in a lightly oiled bowl, cover with a clean kitchen towel, and let rise in a warm spot until doubled in size, about 45 minutes to 1 hour.
  5. Punch down dough and divide into 4 equal pieces. Roll each piece into a 1-inch thick, 18-inch long rope. Cut into 1-inch pieces to make about 40-50 pretzel bites.
  6. Preheat oven to 425°F (220°C). In a large pot, bring 10 cups of water to a rolling boil. Carefully add ½ cup baking soda (it will foam). Reduce heat to a gentle simmer.
  7. Drop 6-8 pretzel bites into the simmering baking soda bath. Boil for 30 seconds, then transfer to a parchment-lined baking sheet using a slotted spoon. Space 1 inch apart.
  8. Using a sharp knife, make a shallow X on top of each pretzel bite. Sprinkle generously with coarse sea salt while still wet.
  9. Bake for 12-15 minutes until deep golden brown and glossy. Let cool on baking sheet for 2 minutes.
  10. While still warm, brush pretzel bites generously with melted butter.
  11. For the beer cheese dip: In a small saucepan over medium heat, warm beer until steaming but not boiling. Reduce heat to low. Add softened cream cheese and whisk until smooth. Gradually add shredded cheddar cheese, a handful at a time, whisking constantly until melted. Stir in Dijon mustard, garlic powder, and Worcestershire sauce. Season with salt and pepper to taste. Keep warm over very low heat.
