  • 8 ounces wide or medium egg noodles
  • 8 cups low-sodium chicken broth
  • 3 medium carrots, peeled and sliced into rounds
  • 3 stalks celery, sliced

  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 2 bay leaves
  • 1 teaspoon salt, plus more to taste
  • ½ teaspoon freshly ground black pepper
  • ¼ cup fresh parsley, chopped (for garnish)
  • 2 tablespoons olive oil

Instructions

  1. Prep your vegetables. Dice the onion into small pieces—about ¼-inch. Slice the carrots into thin rounds, about ⅛-inch thick. Slice the celery into half-moons. Mince the garlic.
  2. Cut the chicken. Pat the chicken thighs dry with paper towels. Cut them into bite-sized pieces—about 1-inch cubes. Season lightly with salt and pepper.
  3. Sauté the aromatics. Heat the olive oil in a large pot over medium heat. Add the diced onion and cook for 2-3 minutes until it starts to soften. Add the garlic, thyme, and oregano, and cook for another 30 seconds until fragrant.
  4. Brown the chicken. Add the chicken pieces to the pot. Cook for 3-4 minutes, stirring occasionally, until the chicken is lightly browned on the outside.
  5. Add the broth and vegetables. Pour in the chicken broth. Add the sliced carrots, celery, and bay leaves. Stir everything together. Bring to a boil over high heat.
  6. Add the noodles. Once the soup is boiling, add the egg noodles. Stir gently so they don’t clump together. Reduce the heat to medium-low and let it simmer. Set a timer for 10 minutes.
  7. Check for doneness. After 10 minutes, the noodles should be tender but still firm—al dente. The chicken should be cooked through. Taste the broth and adjust salt and pepper.
  8. Finish and serve. Remove the bay leaves. Stir in the fresh parsley if using. Ladle into bowls and serve hot.

Notes

Don’t overcook the noodles—they continue to soften after the heat is off. Use low-sodium broth to control saltiness. Cut vegetables uniformly for even cooking. For meal prep, cook noodles separately and add when reheating. The soup freezes well without noodles.
