Instructions

  1. Chop the cabbage into bite-sized pieces, slice the smoked sausage into 1/4-inch rounds, thinly slice the onion, and mince the garlic. This should take about 10 minutes.
  2. Heat a large skillet or cast iron pan over medium heat and add 2 tablespoons of olive oil. Warm for 1-2 minutes until shimmering.
  3. Add the sliced sausage to the skillet and cook for 5-7 minutes, stirring occasionally, until browned and slightly crispy around the edges. Use a slotted spoon to transfer the sausage to a bowl, leaving the fat in the pan.
  4. Add the sliced onions to the skillet and cook for 4-5 minutes, stirring often, until softened and translucent. Add the minced garlic and cook for another 30 seconds, being careful not to burn it.
  5. Add the chopped cabbage to the skillet and stir well to coat with the onion, garlic, and sausage fat. Cook for 8-10 minutes, stirring every few minutes, until the cabbage is tender but still slightly crunchy.
  6. Sprinkle smoked paprika, red pepper flakes (if using), salt, and black pepper over the cabbage. Pour in 1/2 cup chicken broth or water and toss everything together. Cover the skillet with a lid and steam for 5 minutes to soften the cabbage and meld flavors.
  7. Remove the lid and stir in the browned sausage. Drizzle apple cider vinegar over the top and toss to combine. Cook uncovered for 2-3 minutes to reduce liquid slightly and intensify flavors.
  8. Taste and adjust seasoning with additional salt, pepper, or smoked paprika if needed. Serve hot.
