  • 3 tablespoons fresh lemon juice (45 ml)
  • 2 tablespoons simple syrup (30 ml)
  • 1 teaspoon bourbon flavoring extract (5 ml)
  • 1/2 cup soda water (120 ml)
  • Fresh mint leaves (a few sprigs, optional)
  • Ice cubes

Instructions

  1. Place the fresh blackberries in a mixing glass. Use a muddler or wooden spoon to gently press the berries just enough to release their juices but not crush the seeds, about 1-2 minutes.
  2. Add 3 tablespoons (45 ml) of fresh lemon juice and 2 tablespoons (30 ml) of simple syrup to the muddled berries. Stir gently with a whisk or fork to combine.
  3. Add 1 teaspoon (5 ml) of bourbon flavoring extract and stir again to blend.
  4. Fill a serving glass halfway or more with ice cubes.
  5. Strain the berry mixture through a fine mesh strainer into the glass for a smoother drink, or pour with pulp for a rustic texture.
  6. Top with about 1/2 cup (120 ml) of soda water and stir gently to combine.
  7. Garnish with a sprig of fresh mint and a few whole blackberries. Serve immediately.

Notes

Use gentle pressure when muddling to avoid bitter seeds. Fresh lemon juice is essential for brightness. Adjust sweetness gradually. Chilling glasses and soda water enhances refreshment. Frozen blackberries can be used if thawed and drained. For a sugar-free version, substitute simple syrup with stevia or erythritol syrup. Adding a drop of liquid smoke can mimic bourbon nuances.
