A tender, juicy bone-in ham slow-cooked in a crockpot with a sticky-sweet brown sugar Dijon mustard and pineapple glaze, perfect for gatherings and easy meals.

Ingredients

Scale
  • 4 to 5 pounds bone-in pre-cooked ham (spiral-cut preferred)
  • ½ cup packed brown sugar (dark brown sugar recommended)
  • ¼ cup Dijon mustard
  • 1 can (about 8 ounces) pineapple slices, drained (reserve juice)
  • ½ cup pineapple juice (from canned pineapple or fresh)
  • 2 tablespoons apple cider vinegar
  • ½ teaspoon ground cloves (optional)
  • 1 teaspoon garlic powder
  • Freshly ground black pepper, to taste

Instructions

  1. Remove packaging and any plastic disks from the ham’s surface. Pat dry with paper towels to help the glaze stick better.
  2. In a medium bowl, combine ½ cup brown sugar, ¼ cup Dijon mustard, ½ cup pineapple juice, 2 tablespoons apple cider vinegar, 1 teaspoon garlic powder, ½ teaspoon ground cloves (if using), and freshly ground black pepper. Whisk until smooth.
  3. Place the ham flat side down in the crockpot. Pour the glaze over the ham, coating it well. Arrange pineapple slices on top, tucking some under the ham if desired.
  4. Cover and cook on LOW for 6 to 7 hours. Avoid lifting the lid during cooking.
  5. Baste the ham with the glaze every 2 hours using a spoon or brush to keep it moist and flavorful.
  6. Check that the ham is heated through and tender, with a sticky, slightly caramelized glaze.
  7. Remove the ham and let it rest for 10 minutes before carving to allow juices to redistribute.
  8. If glaze is thin, pour cooking juices into a saucepan and simmer over medium heat for 5-7 minutes until syrupy. Pour over slices when serving.

Notes

Use a pre-cooked ham to avoid dryness. Basting every 2 hours keeps the ham moist and flavorful. Keep heat on low to prevent glaze burning. If glaze is too thin after cooking, reduce it by simmering the cooking juices. For gluten-free, verify mustard ingredients. Fresh or frozen pineapple chunks can substitute canned pineapple. Variations include adding cayenne for heat or bourbon for warmth.
