  • 20 medium fresh strawberries, washed and hulled
  • 8 ounces (225 grams) cream cheese, softened
  • 1/2 cup (60 grams) powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons (30 ml) heavy cream
  • 6 ounces (170 grams) dark chocolate, chopped or chips
  • 1 tablespoon (15 ml) coconut oil (optional)

Instructions

  1. Gently wash about 20 medium-sized strawberries and pat dry. Remove stems and hull centers to create space for filling without piercing through the berry. Set aside on parchment-lined tray.
  2. In a large mixing bowl, beat softened cream cheese with powdered sugar until smooth using a hand mixer. Add vanilla extract and heavy cream, whipping until light and fluffy. Add more cream if mixture is too stiff.
  3. Using a small spoon or cookie scoop, fill each strawberry half with cheesecake mixture. Place filled strawberries on parchment-lined tray and refrigerate for at least 20 minutes to firm up.
  4. Melt dark chocolate with coconut oil in a double boiler or microwave in 30-second intervals, stirring between each until smooth.
  5. Remove strawberries from fridge. Dip the cheesecake-filled part into melted chocolate, swirl to coat, and let excess drip off. Place dipped bites back on parchment paper. Repeat for all strawberries.
  6. Refrigerate dipped bites for at least 30 minutes until chocolate is set and firm.
  7. Arrange on a platter and serve chilled or at cool room temperature.

Softening cream cheese thoroughly is essential for smooth filling. Chill filled strawberries before dipping to prevent oozing. Melt chocolate slowly to avoid burning. If chocolate thickens during dipping, gently reheat. Store bites in airtight container refrigerated up to 3 days. For dairy-free, use vegan cream cheese and coconut cream. Frozen strawberries must be thawed and drained well.
