  • 1 cup packed dark brown sugar (about 200 grams)
  • ½ cup raw or local honey (120 ml)
  • 1 cup finely crushed or pureed fresh pineapple (about half a medium pineapple)
  • 2 tablespoons grated fresh ginger
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • ½ teaspoon ground cloves (optional)
  • 12 to 15 whole cloves (optional, for studding the ham)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Remove any packaging and skin from the ham, leaving a thin layer of fat. Score the surface in a diamond pattern about ½ inch (1.3 cm) apart. If using whole cloves, stud each diamond’s center with a clove.
  3. In a medium bowl, combine brown sugar, honey, crushed pineapple, grated ginger, Dijon mustard, apple cider vinegar, and ground cloves. Stir until smooth and spreadable.
  4. Place the ham on a rack in your roasting pan, flat side down. Brush a generous layer of glaze over the entire ham, making sure to get into the scored lines. Reserve half of the glaze for later basting.
  5. Roast the ham uncovered for about 1 ½ to 2 hours (10-12 minutes per pound). Every 20-30 minutes, baste the ham with the reserved glaze to build up a sticky, caramelized crust. Tent with foil if the glaze darkens too quickly.
  6. Check for doneness by ensuring the internal temperature reaches 140°F (60°C) using a meat thermometer inserted into the thickest part.
  7. Remove the ham from the oven and let it rest for 15 minutes before slicing to allow juices to redistribute and the glaze to set.
  8. Slice the ham along the spiral cuts and arrange on a platter. Garnish with fresh pineapple slices or chopped parsley if desired.

Notes

If glaze is too thin, simmer gently on stove for 5 minutes to thicken before applying. Baste regularly to build layers of flavor and prevent burning. Tent with foil if glaze darkens too quickly. Rest ham before slicing for juicier meat and better glaze setting. Spiral-sliced ham saves prep time and makes serving easier.
