  • 1 lb (450 g) ground turkey (lean, not extra-lean)
  • 1 tbsp (15 ml) olive oil
  • 1 small yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup (60 ml) tomato sauce
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp (15 ml) fresh lime juice
  • Optional: 1/4 tsp red pepper flakes

Instructions

  1. Finely chop the onion and mince the garlic.
  2. Heat olive oil in a large skillet over medium heat until shimmering but not smoking.
  3. Sauté the onion for 3-4 minutes until soft and translucent.
  4. Add garlic and stir constantly for 30 seconds to prevent burning.
  5. Add ground turkey, breaking it up with a spoon, and cook for 7-8 minutes until no longer pink and browned.
  6. Sprinkle in cumin, chili powder, smoked paprika, oregano, salt, pepper, and optional red pepper flakes. Stir well.
  7. Add tomato sauce and simmer gently for 5 minutes to meld flavors and reduce excess moisture.
  8. Remove from heat and stir in fresh lime juice.
  9. Transfer to a container and let cool completely for 15-20 minutes before freezing.
  10. Divide into meal-sized portions in freezer-safe containers or bags, label, and freeze.

Notes

Do not overcrowd the pan to ensure proper browning. Cool meat completely before freezing to avoid ice crystals. Reheat gently with a splash of water or broth if dry. Adding tomato sauce and lime juice keeps the meat juicy after freezing.
