  • 1 bunch asparagus, trimmed, about 1 pound (450 grams)
  • 1 whole head roasted garlic cloves
  • 4 tablespoons (60 grams) unsalted butter, softened
  • Juice of 1 large lemon
  • 2 tablespoons (30 ml) olive oil
  • 1 teaspoon garlic powder
  • 2 tablespoons fresh parsley, chopped (optional)
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Slice the top off the garlic head to expose the cloves, drizzle with olive oil, wrap in foil, and roast for about 30 minutes until soft and fragrant.
  2. Trim the asparagus by snapping or cutting off the woody ends (about 1-2 inches). Toss asparagus in 1 tablespoon olive oil, salt, and pepper, then spread evenly in an oven-safe skillet or baking dish.
  3. In a small bowl, combine softened butter, fresh lemon juice, garlic powder, chopped parsley, and a pinch of salt and pepper. Mix until well blended and set aside.
  4. Pat salmon filets dry with paper towels. Lightly salt and pepper both skin and flesh sides.
  5. Arrange salmon skin-side down on top of the asparagus in the skillet. Dot salmon and asparagus with a few roasted garlic cloves.
  6. Spread the lemon butter sauce evenly over the salmon and asparagus.
  7. Transfer the skillet to the preheated oven and roast for 12-15 minutes, or until salmon flakes easily and asparagus is tender-crisp. For a slight crisp on top, broil for an additional 1-2 minutes, watching closely.
  8. Remove from oven and let rest for 3-5 minutes before serving.
