These fudgy brownie mix cookies are quick, simple, and perfect for celebrations like graduation parties. They deliver rich, chewy brownie flavor in a fun cookie form that’s a crowd-pleaser.

Ingredients

Scale
  • 1 box brownie mix (about 18 oz / 510 g)
  • ½ cup unsalted butter (113 g), melted
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ¾ cup semi-sweet chocolate chips (130 g)
  • Optional: sprinkles or edible graduation decorations

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the melted butter, eggs, and vanilla extract. Whisk gently until smooth, about 1-2 minutes.
  3. Add the entire box of brownie mix to the wet ingredients. Stir with a spatula or wooden spoon until just combined; do not overmix. Aim for a thick, fudgy dough.
  4. Fold in the semi-sweet chocolate chips gently.
  5. Use a cookie scoop or tablespoon to place dough balls about 2 inches apart on the baking sheet.
  6. Bake for 10-12 minutes until edges look set but centers are still soft. They will firm up as they cool.
  7. Let the cookies rest on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  8. If desired, press sprinkles or decorations on top immediately after baking while cookies are warm but not hot.

Notes

Do not overmix the dough to keep cookies soft and fudgy. Watch bake time closely as oven temperatures vary. Use room temperature eggs for smoother dough. For thicker cookies, chill dough for 30 minutes before baking. Cookies freeze well for up to 3 months. Flavors deepen after resting overnight. Optional decorations can be added immediately after baking.
