Instructions

  1. Measure 4 tablespoons (30 g) of all-purpose flour, 2 tablespoons (15 g) cocoa powder, 3 tablespoons (38 g) sugar, 3 tablespoons (45 ml) Baileys Irish Cream, and 1 large egg (about 50 g). Ensure the egg is at room temperature.
  2. In a microwave-safe mug, sift together the flour, cocoa powder, sugar, and a pinch of salt if using to avoid lumps.
  3. Crack the egg into the mug, then pour in the Baileys. Stir vigorously with a fork or small whisk until smooth and glossy, about 30 seconds.
  4. Optionally, add a handful of chocolate chips or chopped nuts and stir gently.
  5. Microwave on high for 90 seconds. Start checking at 1 minute 20 seconds. The cake should rise and spring back lightly when touched.
  6. Let the mug cake rest for 1-2 minutes before eating to allow the texture to set.
