Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice the kielbasa into ½-inch rounds, keeping slices consistent in thickness.
  3. Cut the bell peppers into ½-inch wide strips and slice the red onion into wedges.
  4. In a large bowl, toss the kielbasa, peppers, and onions with 2 tablespoons olive oil, garlic powder, smoked paprika, salt, and black pepper until well coated.
  5. Arrange the mixture in a single layer on a sheet pan lined with parchment paper or a silicone baking mat, leaving space between pieces.
  6. Roast in the oven for 20-25 minutes, stirring once halfway through, until kielbasa edges are browned and peppers are tender with slightly charred tips.
