These crispy Kentucky Hot Brown sliders combine roast turkey, crispy bacon, and a creamy homemade Mornay sauce toasted to golden perfection on slider buns. Perfect for quick snacks, parties, or casual dinners with a southern charm twist.

Ingredients

  • Slider buns – soft, small buns (preferably brioche or potato rolls for richness)
  • Roast turkey – thinly sliced, deli-style or leftover roast turkey breast (about 1 pound / 450 g)
  • Bacon – thick-cut, cooked until crisp (8 slices)
  • Butter – unsalted, softened (3 tablespoons)
  • Cheese – Gruyère or sharp white cheddar, shredded (1 cup / 100 g)
  • All-purpose flour – 2 tablespoons
  • Milk – whole milk preferred, warmed (1 cup / 240 ml)
  • Salt & pepper – to taste
  • Garlic powder – optional, for seasoning the buns (½ teaspoon)
  • Tomato slices – thin, fresh slices (optional, 4 slices)
  • Fresh parsley or chives – finely chopped, for garnish

Instructions

  1. Preheat your oven broiler to high and let it warm for about 5 minutes.
  2. In a medium saucepan, melt 2 tablespoons of butter over medium heat. Stir in 2 tablespoons of all-purpose flour and cook for 1-2 minutes until it forms a smooth paste (roux) and smells slightly nutty.
  3. Slowly whisk in 1 cup (240 ml) of warmed whole milk to avoid lumps. Continue whisking until the sauce thickens and coats the back of a spoon, about 4-5 minutes.
  4. Remove from heat and stir in 1 cup (100 g) of shredded Gruyère cheese until melted and smooth. Season with salt, pepper, and a pinch of garlic powder if desired. Set aside.
  5. Heat a large skillet over medium heat. Spread about 3 tablespoons of softened butter on the cut sides of the slider buns. Place buns butter-side down on the skillet and toast until golden and crispy, about 2-3 minutes.
  6. Assemble the sliders by layering on each bottom bun: a slice of roast turkey, a slice of crispy bacon (cut in half to fit), and a thin slice of tomato if using. Spoon generous amounts of Mornay sauce over the top.
  7. Place the assembled sliders on a baking sheet and broil for 2-3 minutes, or until the sauce bubbles and the top is lightly browned. Watch carefully to prevent burning.
  8. Sprinkle freshly chopped parsley or chives over the sliders and serve immediately while warm and gooey.

Notes

If the Mornay sauce thickens too much while waiting, whisk in a splash of warm milk to loosen it. Toasting the buns with butter prevents sogginess and adds flavor. Watch the broiler carefully to avoid burning the cheese. Thick-cut bacon holds crispness better. The recipe can be adapted for gluten-free diets by using gluten-free buns and flour.
