Instructions

  1. Cut the ripe avocado in half, remove the pit, and scoop the flesh into a bowl. Add lemon juice and a pinch of salt, then mash with a fork until creamy but still slightly chunky. Set aside.
  2. Toast the bread slices to your preferred crispiness (2-3 minutes in a toaster or 5-6 minutes in a toaster oven).
  3. Heat a non-stick or cast-iron skillet over medium heat and add butter or olive oil. Let it melt and coat the pan evenly.
  4. Crack each egg gently into the pan, keeping yolks whole. Reduce heat to medium-low and cook undisturbed for 3-4 minutes until whites are set and edges are golden and crispy. For runny yolks, do not flip; for over-easy, flip carefully and cook an additional 30 seconds.
  5. Spread mashed avocado evenly over each slice of toast.
  6. Slide a fried egg onto each slice using a spatula.
  7. Sprinkle everything bagel seasoning generously over the eggs and avocado. Add freshly cracked black pepper, a pinch of salt, and optional red pepper flakes.
  8. Serve immediately for best texture and flavor.
