  • 2 cups (200g) sharp cheddar cheese, shredded
  • 4 oz (115g) cream cheese, softened
  • 1/3 cup (80ml) mayonnaise
  • 2 tablespoons jarred pimientos, drained and chopped
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Pinch of cayenne pepper (to taste)
  • Freshly ground black pepper (to taste)
  • Salt (to taste)
  • Crackers and celery sticks for serving

Instructions

  1. Soften the cream cheese by leaving it at room temperature for about 30 minutes or microwave for 15-20 seconds until soft but not melted.
  2. In a mixing bowl, combine the softened cream cheese and mayonnaise. Mix with an electric mixer or whisk until smooth and creamy.
  3. Fold in the shredded sharp cheddar cheese and chopped pimientos gently with a spatula.
  4. Add Worcestershire sauce, garlic powder, onion powder, cayenne pepper, black pepper, and salt. Mix thoroughly and adjust seasoning to taste.
  5. Cover and refrigerate the dip for at least 30 minutes to let flavors meld and texture firm up.
  6. Serve chilled or at room temperature with crackers and celery sticks.

Notes

If the dip is too thick after chilling, stir in a teaspoon of milk or cream to loosen it slightly. Freshly shredded cheddar cheese helps avoid clumping. Let the dip chill for at least 30 minutes for best flavor and texture. Store leftovers in an airtight container in the fridge for up to 4 days. Avoid microwaving leftovers directly to prevent separation.
