A quick and easy creamy tomato basil soup made with sweet San Marzano tomatoes and fresh basil, perfect for cozy meals and busy weeknights.

  • 1 can (28 oz / 796 g) San Marzano tomatoes
  • 2 tbsp (30 ml) extra virgin olive oil
  • 1 medium yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 1 cup packed fresh basil leaves, chopped (or 1 tsp dried basil)
  • 2 cups (480 ml) vegetable broth
  • ½ cup (120 ml) heavy cream (or coconut cream for dairy-free)
  • Salt to taste (preferably kosher salt)
  • Freshly ground black pepper to taste
  • Optional pinch of sugar

Instructions

  1. Heat 2 tablespoons of olive oil in a large pot over medium heat until shimmering, about 2 minutes.
  2. Add the finely chopped onion and cook, stirring occasionally, until translucent and soft, about 6-8 minutes.
  3. Stir in the minced garlic and cook for an additional 1 minute until fragrant, being careful not to burn it.
  4. Pour in the entire can of San Marzano tomatoes (including juices) and gently break up the tomatoes with a spoon.
  5. Add 2 cups of vegetable broth and stir to combine.
  6. Reduce heat to low and simmer uncovered for 20 minutes, stirring occasionally.
  7. Stir in ¾ cup of chopped fresh basil leaves and season with salt and pepper to taste. Add a pinch of sugar if tomatoes are too acidic.
  8. Remove the pot from heat and puree the soup using an immersion blender until smooth and creamy. If using a regular blender, blend in batches carefully.
  9. Stir in ½ cup of heavy cream until fully incorporated. Return to low heat to warm through, but do not boil.
  10. Taste and adjust seasoning with more salt, pepper, or basil if needed. Serve hot.

Notes

Do not boil the soup after adding cream to prevent curdling. Blend in small batches if using a regular blender and vent the lid slightly to avoid pressure buildup. Add fresh basil towards the end of cooking to preserve its bright flavor. If soup is too thick, add more broth or cream. For dairy-free, substitute heavy cream with coconut cream or cashew cream. Simmer soup for at least 20 minutes to deepen flavors.
