  • 1/2 cup heavy cream (or half-and-half for lighter option)
  • Fresh chopped parsley or green onions for garnish (optional)

Instructions

  1. Pat chicken thighs dry with paper towels. Season generously with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a skillet over medium-high heat. Sear chicken thighs skin-side down until golden brown, about 4 minutes per side.
  3. In a small bowl, mix minced garlic, Parmesan cheese, and softened butter.
  4. Place seared chicken thighs skin-side up in the crockpot. Spread garlic-Parmesan mixture evenly over each piece. Pour chicken broth around the chicken, avoiding the topping.
  5. Cover and cook on high for 3-4 hours or on low for 6-7 hours until chicken is tender and reaches an internal temperature of 165°F (74°C).
  6. While chicken cooks, boil peeled and chopped potatoes in salted water until fork-tender, about 15 minutes. Drain well.
  7. Return potatoes to pot or bowl. Add butter, cream cheese, heavy cream, and salt to taste. Mash until smooth and creamy, adjusting cream for desired texture.
